Ingredients :
  • 2 packs Lucky Me! Pancit Canton Original
  • 2 tbsp vegetable oil
  • 2 slices canned luncheon meat
  • 1/2 cup Japanese bread crumbs
  • 2 eggs, beaten
  • 1 cup water
  • 2 tsp sugar*
  • 1 tsp soy sauce
  • 1 small onion, sliced thinly

Tip: Substitute the 2 tsp sugar with 1/4 cup mirin to give the dish an authentic Japanese kick!

Cooking Instructions :
  1. Set aside Lucky Me! Pancit Canton Original (LM) seasoning, soy sauce and oil.
  2. Boil LM noodle cakes in water for 3 minutes. Drain.
  3. Slice luncheon meat into desired thickness. Dip in beaten eggs and coat with breadcrumbs. Fry in very hot vegetable oil. Remove and drain on paper towel lined plate. Set aside.
  4. Pour LM oil into pan and sauté the onions. Add LM soy sauce and LM seasoning together with water, sugar and soy sauce. Add cooked noodles. Stir in the rest of the beaten eggs. Cook until egg sets. Transfer into a bowl, top with breaded luncheon meat and garnish with thinly sliced leeks. Serve.
