Beef Asparagus Bihon

Ingredients :
  • 2 packs Lucky Me! Pancit Bihon with Kalamansi
  • 1 cup vegetable oil
  • 4 tsp rice wine
  • 4 tsp corn starch
  • 3 tbsp honey
  • 4 tsp soy sauce
  • 2 tsp sesame oil
  • 1/2 cup water
  • 100 grams thinly sliced beef sirloin, pounded lightly and cut into strips
  • 1 tbsp vegetable oil
  • 1/2 tsp ginger, minced
  • 1 tsp garlic, minced
  • 4 pieces asparagus spears, cut into ½ inch spears

Cooking Instructions :
  1. Set aside the Lucky Me! Pancit Bihon (LM) soy sauce and seasoning. Discard LM oil.
  2. In a medium size pan, heat vegetable oil until very hot. (It is important that the vegetable oil is steaming hot.) Immerse LM noodle cakes in hot oil. They will puff up immediately. Quickly take them out and set aside on a plate lined with paper towels.
  3. In a small bowl, mix LM soy sauce and LM seasoning with rice wine, cornstarch, honey, soy sauce, sesame oil, and water. Marinate beef in this mixture.
  4. In a small pan, heat vegetable oil and sauté ginger and garlic. Add beef strips and marinade and cook for 2 minutes. Add asparagus and simmer until asparagus is cooked and sauce is thickened. Pour mixture over fried noodles and serve immediately.
